Grade B Pure Maple Syrup

What it is:  Grade B Pure Maple Syrup, small batch produced in Connecticut's Berkshire Hills and packed in gorgeous Italian glass bottles.

Details:  250 ml bottle, $15.99; 500 ml bottle, $25.99.

Who makes it:  Mead & Mead's, a brother and sister team, splitting their time between the Berkshire sugarbush and the California coastline.

Why I Love it: Grade B Pure Maple Syrup doesn't indicate a lesser grade than 'A'. Instead, it tells us that this maple syrup flowed from later in the season, when the days were warmer and the sugarbush gave sap more pronounced in maple flavor. Nutty, buttery, and rich, this syrup is as smooth as it is sweet. I love that Mead & Mead's lets nature take the lead, producing maple syrup that is a unique expression of place. What's more, the Mead's maple operation is pristine, from the maintenance of the groves (no pesticides or herbicides) to the handling of the tap lines and the evaporator. They are fastidious which translates into a finished product both pure and clean.

How I’ll use this in my kitchen:  This syrup is excellent for baking—as well, it's the bottle I grab first to make marinades and dressings, or toss with root vegetables, squash and Brussels sprouts.
