Salami Cacciatore

 

What it is:  An Italian-style dry-cured "hunter's salami" that boasts big flavors and unctuous texture.

Details:  One 5.3-ounce picnic salami, $10.

Who makes it:  Olympic Provisions, crafting the finest old world charcuterie in Portland, Oregon.

Why I love it:  This typical Italian salami is referred to as Cacciatore or "hunter's style" because it's commonly carried by huntsmen in their satchels and eaten on the move. Olympic Provisions makes a masterful version with bold flavors of caraway, coriander, dried red chile and black pepper encased in perfectly cured heritage pork. Because all of their spices are ground in-house and developed over a patient curing process, the finished product is at once gutsy and mellow, rich and smooth. This is for the serious salami lover!


How I'll use this in my kitchen:  Tucked in my backpack along with some hard pretzels and eaten as a snack while I'm mushroom hunting or hiking.
