Why I love it:  Salted caramel is pretty overdone of late, but the fact is, it doesn't get old. What's not to love about gooey luscious milk caramel, flecked throughout with the tiniest shards of sea salt? David Briggs, the man behind Xocolatl, is a bit of an expert on the confection. His experience in the hot kitchen has taught him the subtlest use of salt in sweets and he wears it well. In this version, rich dark Ecuadorian chocolate is molded into bar form and dotted throughout with tiny hunks of his signature salt caramel. The combination will have you begging for more.

How I'll use this in my kitchen:  I like to savor this sort of chocolate slowly, little by little. I'll probably gift some to my sister too, who's sure to gobble it up in a few bites.
