What it is:  Bourbon Barrel-Smoked Cracked Peppercorns

Who makes it:  Bourbon Barrel Foods, in Louisville, Kentucky… “The Gateway to Bourbon Country” – yes, let us through those gates!

Why I love it:  This bourbon barrel smoked peppercorn is a fine extension of the entire Bourbon Barrel line. Owner, Matt Jamie believes in slow, small and simple and we dig it.  Their cracked peppercorns are smoked in small-batches with re-purposed barrel oak that once held some of Kentucky's finest bourbons and their flavor is pungent, with an earthy oak hint to it. I love using unique spices, and while my peppercorn category is multi-colored, it hasn't included a smoked entry until now. 

How I’ll use this in my kitchen:  The first thing that comes to mind is a smokey bourbon-spiked Steak au Poivre or a peppery gravy to spoon over biscuits.  I love gougeres and I think these peppercorn would be fantastic along with an alpine style cheese in the batter.  I also intend to add them to my current peppercorn grinder mix, giving it something special.
