Sam's Sundae


In Bi-Rite Market's Eat Good Food, grocer Sam Mogannam shares his recipe for Bi-Rite Creamery's best-selling sundae. More an ingredient list than actual recipe, this frozen treat exemplifies the essence of the book -- ingredients at their best require less manipulation to be an extraordinary culinary experience.

Sam calls for dark chocolate ice cream and bergamot-infused olive oil in the book, but we went for a vanilla and orange combo. Have faith as you drizzle on olive oil -- it will congeal on the ice cream, but it offers a cool and luscious mouthfeel as you take each bite. The salt boosts the flavor of the ice cream and olive oil and provides a crunchy texture, while the fluffy, unsweetened whipped cream balances the rich density of the other components.
